Beyond his inspiring expertise and the culinary tips that he's ready to give to anyone who asks, he knows where his meat comes from and how the farmer raised it. Nearly 85 per cent of the meat found in the Quebec market comes from slaughterhouses in Western Canada or the US, but Alexis and Jean-Simon prefer to stock their butchery with locally sourced and traceable products.
