Restaurant Sinclair is nestled in the heart of the chic Hotel St-Sulpice in Old Montreal, just behind the Notre-Dame Basilica. Many changes have taken place since 2012, when Gino Mourin bought the restaurant; it's been a true renaissance for the Sinclair. Originally located in the basement, the restaurant can now be found on the ground floor of the Hotel St-Sulpice, set under a beautiful glass roof with large windows overlooking the gardens and terrace at the back.
There is a bright, almost ethereal feel to the space, where white and transparency dominate. Gino explains that the inspiration for the decor came from the Delano Hotel in South Beach, which is frequented by Madonna. "I was inspired by the great white curtains and brightness — that was several years ago now. At the time, I didn't know it would be for the Sinclair."
The restaurant's menu changes constantly, according to the market and its fresh produce. Even the wine list is updated once or twice a week based on the arrival and availability of products.
A bright, luxurious setting, sheltered from the street, awaits you at Sinclair, which offers three private rooms. Breakfast is served from 6:30 to 10:30 am, in their dining room and on the terrace. Continental, Canadian and healthy breakfast plates are offered, as well as à la carte choices. They serve bright, flavourful cuisine like Tuscan-style toast with tomato compote, prosciutto chips and shredded basil, or variations on classic dishes, like a millefeuille of smoked salmon and bagel chips.
