1. Peach cobbler

Ingredients:

Filling

  • 250 ml (1 c) preserving liquid
  • 5 ml (1 tsp) cornflour
  • 300 ml (1 1/4) sugar
  • 10 ml (2 tsp) nutmeg
  • 4 medium-sized preserved peaches
  • 5 ml (1 tsp) lemon juice
  • 15 ml (1 tbsp) butter

Topping

  • 250 ml (1 c) plain flour
  • 30 ml (2 tbsp) castor sugar
  • 10 ml (2 tsp) baking powder
  • 60 ml (4 tbsp) butter or margarine
  • 1 L (4 c) milk
  • 1 large egg, lightly beaten

Directions:

  1. Preheat oven to 200°C (392°F).
  2. In a small saucepan combine the preserving liquid and cornflour, stir well, then add sugar and nutmeg – depending on the sweetness of the preserving syrup, you may wish to reduce or increase the amount of sugar
  3. Cook over a moderate heat until the mixture thickens
  4. Remove from the heat, gently stir in the peaches, lemon juice and butter, then spoon the mixture into a pie dish
  5. To make the topping, sift flour, castor sugar and baking powder into a bowl. Rub in butter or margarine
  6. Add milk and the beaten egg and stir the mixture well
  7. Spoon the topping over the peach and syrup mixture
  8. Bake until the topping is crisp and golden
  9. Serve cobbler warm with cream, ice cream or plain yogurt

2. Fruit crumble with crunchy oat topping

Ingredients:

Fruit

  • 750 ml (3 c) fresh fruit (apples, pears and peaches work well)

Topping

  • 90 g (3 oz) butter
  • 300 ml (1 1/4 c) golden syrup
  • 500 ml (2 c) rolled oats

Directions:

  1. Preheat oven to 180°C (356°F).
  2. Arrange the fruit in an ­oven-proof dish
  3. Depending on the sweetness of the fruit, you may wish to add sugar
  4. Make the topping by gently heating the butter and golden syrup in a small saucepan until they have dissolved
  5. Remove from heat and add the oats; stir well until all the ingredients are combined
  6. Cover the fruit with this topping and bake it until the topping has become a golden-brown colour
  7. Serve hot with custard, yogurt, cream or ice cream
