Baking heart-friendly oatmeal cookies

These heart-conscious cookies contain oats, which help to protect your heart by lowering cholesterol levels. The addition of fruit and vegetables (raisins and carrots) helps to boost the nutritional profile of these tasty treats.

Preparation:  20 minutes
Cooking:  10 to 12 minutes
Makes:  45 cookies

Ingredients:

  • 130 g (1 c) all-purpose flour
  • 12 ml (2 1⁄2 tsp) baking powder
  • 2 ml (1⁄2 tsp) salt
  • 2 ml (1⁄2 tsp) cinnamon
  • 1 ml (1⁄4 tsp) ground cloves
  • 85 g (1 c) old-fashioned rolled oats
  • 1 large egg
  • 125 ml (1⁄2 c) canola oil
  • 5 ml (1 tsp) vanilla extract
  • 220 g (1 c) packed brown sugar
  • 250 ml (1 c) grated carrots
  • 150 ml (2/3 c) seedless raisins

Method:

  1. Preheat oven to 190°C (375°F). Coat two large baking trays with non-stick cooking spray. Stir the flour, baking powder, salt, cinnamon and cloves in a medium bowl. Stir in the oats.
  2. Beat egg, oil and vanilla extract in a large bowl. Beat in sugar. Beat in flour mixture in batches until evenly moistened. Fold in carrot and raisins to make a stiff dough.
  3. Drop heaping teaspoons of dough onto the baking trays, spacing them about five centimetres (two inches) apart.
  4. Bake until golden brown and slightly darker at the edges, 10 to 12 minutes. Leave cookies on baking trays for two minutes. Use a metal spatula to transfer them to a wire rack to cool. Store in an airtight container for up to one week.
